This is one of Steven's absolute favourites...except I don't make it very often because the kids don't really love it and although it is easy it can take a while...my friends Ali and Karyn came around for lunch and a catch up today and I made it for us to eat.
Ali took the photo so I figured I might as well share the recipe too :)
Ingredients....(this is subject to change depending on what I have but here it what went in today)
600g chicken mince (or you could use pork or beef...turkey even)
1 Tbs vegetable oil
250g rice vermicelli noodles
2-3 carrots, grated
1 punnet cherry tomatoes, halved
2 handfuls bean shoots (I love those crunchy little suckers!)
1 red onion, fiely sliced
about 4cm ginger, grated
2 limes, juiced
2 Tbs indonesian soy (kecap manis)
2-3 Tbs light soy (or ordinary soy but don't use as much)
1 Tbs brown or palm sugar
1/2 Tsp sesame oil (if you want...or not)
1-2 chillies, sliced...or none if you don't love it
Fresh coriander and mint (both preferably but if you live in the sticks and woolies doesn't happen to have both you'll just have to make do with one!)
lebanese cucumbers are great too but I didn't have any so we didn't have that in there today.
Here are the steps as I worked through them today...like I said, it's easy but it can be time consuming...but it is something that you can do most of ahead of time :)
- finely slice onion and put into your serving bowl with the juice from one lime
- grate carrots and ginger and throw into the bowl (If you aren't into that fresh, in-your-face ginger taste save it and cook with the mince)...today I used the mandolin to do my grating because we have lost the business part of our grater somewhere, somehow...lucky it's tupperware because I can get it replaced :)
- halve the tomatoes and throw them in
- throw in the bean shoots and sliced cucumber if you are using
- pick the leaves off your coriander and mint and pop them in the bowl too
- mix the jucie from the second lime with the 2 Tbs of light soy, sugar and splash of sesame oil and put to one side
- heat the vegetable oil in a frying pan and cook your mince, towards the end add the 2 Tbs Kejap Manis
- Boil water and pour over vermicelli noodles
- mix noodles with mince in the frying pan and then tip into your serving bowl
- tip over the soy/lime dressing and stir through together with the sliced chillies
- mix and serve...eat with chopsticks...or a fork if your not into chopsticks
- it's okay to lick the bowl if you want ;)
