Step one - send your sister shopping at the market for squid to bring you because you love salt & pepper squid and desparately want to try out the mix you got from the passionate foodie at the farmers market before christmas.
Step two - check out the blog of one beautiful friend, see she's been making yummy corn salsa and ask for the recipe
Step three - create a warm salad of your own from all of the above and watch the family enjoy!...(oh and it helps if said sister is on hand to help with dinner preparations when husband doesn't arrive home from work until 7pm and all 4 children have been in a rather whingy frame of mind!)
Warm Squid Salad with corn salsa salad (serves 6)
squid
- 1kg squid tubes, opened scored and cut in 4
- 4 Tbs salt & pepper seasoning from the passionate foodie or whatever you want to substitute :)
- Vegetable oil for frying squid (I do mine in a wok)
salad
- 3 corn on the cob
- 2 avocados
- 1 red onion
- 1 red capsicum
- 1 good handful coriander leaves
- 1 punnet grape or cherry tomatoes
- 100g baby spinach
dressing
- Juice of 2-3 limes
- 2 Tbs sweet chilli sauce
- 1 tsp sugar
- black pepper
prepare your squid for coating and frying and set aside
cook your corn on the cob in the microwave (6 mins on a plate covered in glad wrap should do the trick), set aside to cool
Grab your bowl and throw in the baby spinach
slice and dice the tomatoes, onion, avocado & red capsicum...add to the bowl
roughly chop the coriander and add to the bowl
Heat your oil, coat the squid (and set aside) & prepare dressing
Cut the corn off the cob when cooled and add to the salad
Dress and toss salad
Fry your squid in the hot hot oil a few pieces at a time, taking care not to overcrowd the pan because then it will be gross, put into a dish with paper towel and into a warm oven as you continue to cook the rest.
Once all the squid is cooked, add to the salad, give it a quick toss and serve and eat immediately!
All my girls cleaned their plates of all but the squid...the boy ate nothing, but that's not unusual - 'I no eat salad for dinner'

Cream + Passionfruit + Banana + Raspberry topping....delicious!
