I find twitter and excellent source of company when I am on the train to and from work. Definitely better conversationalist than the guy who nodded off to sleep next to me today. I elbowed him in the ribs when he slumped sideways on me because that's the kind of day I had.
First I spied a tweet from Catherine Saxelby that got my attention. Walnuts are my go to nut at the moment.
However, we do not need them for increasing any sperm in this house thankyou very much. I met Catherine in New York. She is a lovely lovely lady, she knows an awful lot about food and it was a absolute pleasure meeting her.
Next Seana Smith popped up with this gem. Oh my golly, the idea of spiced honey and apples I could pretty much smell it.
It made me think of those four dodgy apples in the fruit bowl. The ones that you cannot rightly send to school again only to retrieve them from a school bag again. It made me think of baked apples, but it was Tuesday and I had been struggling not to fall asleep on my keyboard for at least the last hour and a half of my day.
I was thanking my luck stars for the lasagne I made on Sunday and stashed in the fridge for the day I couldn't face cooking.
But, I was also thinking of baked apples. My last foray into baked apples was sublime but I just didn't feel that I was exhibiting the state of wakefulness required to core an apple without cutting off part of a finger.
Cue the Ikea apple cutter. Do you have one of these mean greenies, or something similar?
If you don't you should. Especially if you have children. I hate cutting up apples. The ikea apple cutter has meant that many more apples have been eaten in our household over the past year than may have been otherwise.
I'm rambling aren't I? This was meant to be a quick post. Get to the point, seriously.
So, while the lasagne was in the oven I rounded up the 4 apples, washed them, cut them up with the apple cutter contraption and threw them in my small pudding basin. To the apples I added:
1/2 cup sultanas
Juice of half a lemon
1/2 tsp ground cinnamon (or a few shakes from the shaker)
1 Tbs honey
Mix it all about
Then add
1/2 cup walnuts before covering with alfoil and bunging in the oven until cooked to your degree of liking.
I served them up with a good dollop of some Margaret River Greek yoghurt, some sliced strawberries because I love that they are affordable at the moment and a tiny splash of the extravagent vanilla extract I bought. It's so wanky that it even has a piece of vanilla bean in it but it tastes damn fine.
There should be enough there to be shared between four if you are feeling generous.
